Now that the days are getting warmer, skies are brighter and days are longer, it’s time to update our breakfast meals for the springtime! Because no meal should be the same, especially the most important meal of the day, here are some fun and easy vegan breakfast recipes perfect just for spring! Whether you are vegan or just looking for some plant based breakfast ideas, we guarantee that you'll find your next go to breakfast recipe!




Nothing better than waking up in the morning and having your breakfast all ready to go! With a refreshing twist to the classic oatmeal, these acai overnight oats have everything you ever wanted in a breakfast meal. Sweet and tangy berries mixed with your choice of toppings like granola and maple syrup in a hearty bowl of oats! With almost no prep time, all you need to do is mix together all the ingredients in a sealed jar or container, and place in the fridge to set for 1-2 hours or overnight.



For all the savory meal lovers out there, this bowl packs so many textures, flavors and delicious ingredients! Add some sauteed cherry tomatoes, spinach, pan fried small potatoes, avocado, tofu scramble, topped with any seasoning and a drizzle of extra olive oil! By using just about any veggies or toppings that you have in hand, this bowl is completely customizable and perfect for any morning!

To create the yogurt substitute for this raspberry breakfast parfait, all you need is to boil some cashews in a small pot and cover with water for 10 minutes, strain and let cool, once cooled, add cashews with almond milk to a blender. until cashews have become completely smooth. Afterwards, just layer in a glass with some granola, raspberries and enjoy!

In a blender, toss in some frozen bananas, frozen avocado, frozen cauliflower, spinach, almond milk, flax meal and medjool dates. Perfect for a nice weekend morning or a Sunday brunch, not only are they so good, but way healthier than any other pancake alternative out there and so easy to make! To make these pancakes, use a mixture of oat flour and whole wheat pastry flour to make them light and fluffy. Add in nutmeg, vanilla and some ripe bananas. This recipe requires no extra sweetener due to the sweetness of the bananas, but one can never go wrong with adding some maple syrup on top!
